Lentils for the Lazy

You’ll usually see the bags of lentils stacked with the lima beans, pinto beans and the like, all soakers and long-cookers.

Lentils are an exception! With them, there is no overnight soaking and hours of cooking time. No. Lentils need a quick rinse and fully cook in 20 minutes. And, best of all, they are cheap and bristling with protein, fiber, vitamin B1 and minerals.
